This is great for a spring or summer dinner or lunch, nice and easy and really flavorful!! You can use all the veggies I did or cut some off and even add different ones. This is very versatile, the sauce is what makes this dish!

Ingredients

  • 1 pack of soba noodles
  • 1 red pepper, thinly sliced
  • 2 carrots, julienne
  • 1 cup of red cabbage, thinly sliced
  • 1 cup of cooked edamame
  • 1-2 cup of arugula
  • 2-3 green onions
  • 1/3 cup of cashew
  • 1/2 avocado
  • Cilantro for garnish
  • Sauce: 1 lime juiced and zested, 2 tsp of peanut butter, 1 tsp of maple syrup, 1 cup of coconut milk, 1 tbsp of soy sauce

Directions

Cook the soba according to packaging instructions.

Make the sauce by whisking all the ingredients together.

Assemble the salad by putting the noodles in a large bowl as well as all the chopped veggies. Drizzle the sauce and mix well. Sprinkle the cashews and chopped cilantro and enjoy!
