Soba Noodles with veggies

I love the taste the soba, plus they are easier to digest and healthier than regular pasta....


  • 1 package of soba
  • 2 tbsp of avocado oil
  • 1 onion chopped
  • 1 garlic clove, minced
  • 2 tbsp of tamari or soy sauce
  • 1 tbsp of sesame oil
  • 1 tsp of sesame seeds
  • 3 cups of veggies : carrots, mushrooms, cauliflower, edamame, red pepper


Cook the pasta according to the package. Make sure that there are a bit undercook, it is better to finish them in the pan with the veggies.

Heat the  avocado oil and add the onion, garlic, carrots, red pepper, cauliflower  and mushrooms and sauté for like 5-7 minutes. Add the edamame and the pasta and cook for an additional minute or so. Combine the soy sauce and sesame oil tan pour over the pasta. Sprinkle the sesame seeds and serve. This is a dish that is good both hot and cold... leftovers are perfect for the next day lunch or your kids school lunch!
