Socca with Burrata, Tomatoes and Avocado

Makes 2 large ones

This is like halfway between a pancake texture with a pizza but without the guilt and full of plant protein!
It takes very little time to prepare and you choose fun toppings to garnish it with


  • 2 cups of chickpea flour
  • 2 tbsp of olive oil
  • 1 tsp of salt
  • 2 cups of water
  • Toppings : burrata, tomatoes, arugula, avocados, olive oil, salt and pepper,...


Preheat the oven at 400F.

Combine the flour, water, salt and olive oil and mix until smooth!

Heat up 1 tbsp of avocado oil in a oven-safe pan. Pour half of the socca mix and cook for a few minutes on the stove and finish it up in the oven for 5 minutes until golden brown and crispy.

Put on a serving plate and start with the second socca.

Assemble and add all the toppings you would on a toast or a pizza.

I made ours with burrata, cherry tomatoes, arugula, chopped avocado, a drizzle of olive oil and more salt and pepper! It was so good, I cannot wait to experiment more and try new toppings!
