Sole with papaya mint salsa

This is really easy to make and takes literally less than 15 minutes to make. You can even prep the salsa in advance so the inly ting left to do is cook the fish! I love the sweetness and kick of the salsa with enhances the fish perfectly well!
Chop the papaya into small cubes, as well as the red onion. Combine in a small bowl with the mint, 1 tbsp of olive oil, lime, maple syrup, jalapeño and toss.
Heat up a pan with 1 tbsp of olive oil and cook the fish for 2-3 minutes on each side until golden baron and cooked through.
Plate and spoon generously the salsa all over. Serve with steamed rice or cauliflower rice.
