Spaghetti squash Alfredo

My boys swear that they don't like spaghetti squash, that was true until they tasted this recipe!!! I used cream cheese for extra flavor and it was worth it!

Ingredients

  • 1 spaghetti squash
  • 1 8oz pack of cream cheese
  • 1/2 cup of milk
  • 1 clove of garlic, minced
  • 2 tbsp of olive oil
  • 1/2 cup of mozzarella, shredded
  • 1 cup of parmesan cheese, grated
  • 1/2 tsp of salt and 1 tsp of pepper
  • Toppings: everything but the bagel seasoning, fresh chives

Directions

Cut spaghetti squash in half lengthwise using a sharp knife. Scoop out seeds with a large spoon and discard. Using a fork, pierce the skin of the spaghetti squash several times down the middle of each half.
Place a steam rack  on the bottom and pour in 1 cup of water; add spaghetti squash cut side down.
Select pressure cook setting on high; set timer for 10 minutes. Once cooked, shredded the squash to make the spaghetti. You can also cook it in the oven or microwave but oven takes much longer and I am not a huge fan of cooking things in microwave.

Heat up the olive oil and saute the garlic for a minute or two. Add the cream cheese with the milk, and store until it melts. Transfer both cheese in and whisk until smooth. Add the salt and pepper. Taste and adapt seasoning if necessary.

When the squash is cooked, shred it with two forks to form the spaghetti.

Combine the cooked squash with the sauce and sprinkle more cheese if you want, everything but the bagel seasoning and fresh chives!

I like serving this back in the shell just for fun and because it looks pretty!
