Makes 1 sheet pancake

This kind of easy, hands off breakfast is perfect for busier times around the Holidays. I am using apples here but peaches, berries, chocolate chips would be delicious as well.

Ingredients

  • 1 1/4 cups of flour
  • 1 tsp of baking powder
  • 1/2 tsp of cinnamon
  • 1/2 tsp of salt
  • 1 cup of milk
  • 3 tsp of melted butter ( room temperature)
  • 1 tsp of vanilla
  • 1 egg
  • 2 tbsp of maple syrup
  • 1 small apple, peeled and sliced
  • 1 tsp of pumpkin pie spice
  • 2 tbsp of brown sugar

Directions

Preheat the oven at 425F. Grease an 8x8 inches baking pan.

Whisk together the flour, baking powder, salt and cinnamon.  In another bowl combine the milk, eggs, melted butter and maple syrup and gently add to the dry ingredients. Don't over mix it just make sure there are no lumps.

Pour the batter into the greased pan and bake for 6-8 minutes until it start to puff up. Meanwhile toss the apples with the sugar and pumpkin pie spice.

Carefully remove the batter from oven, add the apples and finish baking for another 15-20 minutes, until pancake is set and a knife comes out clean.

Let cool for a few minutes, slice and enjoy with more maple syrup, greek yogurt, nut butter,.....
