This recipe is perfect if you want to use leftover salmon... It went viral on Tiktok so my daughter asked me to make it. Whatever gets them to eat fish right?!


  • 2 cups of cooked sushi rice (or cauliflower rice or a mix of both)
  • 1/2 lb of cooked salmon
  • 1 tbsp of soy sauce
  • 1 tbsp of sriracha
  • 1 tbsp of mayo (I used Vegenaise but original recipe class for Japanese mayo)
  • 6-8 slices of seaweed
  • 1/2 avocado
  • 1 small cucumber, thinly sliced
  • 1 tsp of sesame seeds


Warm the rice and salmon and toss together with soy sauce, sriracha and mayo until flaky. Taste and adapt seasoning, we like it spicy so we added a touch more of spicy sauce.

Serve into 2 bowls and add equally the cucumber slices as well as the avocado. Sprinkle some sesame seeds and serve with the seaweed sheets. I also topped these with ginger (which I always have in my fridge) and seaweed salad.

Next time I am trying this with tuna!!!
