I always thought that this was a hard dish to prepare. Since I love spicy tuna, I researched it a bit and finally found a couple of recipes ( that I combined together and came up with this super easy and delicious version of it.... This makes a super easy dinner that requires no cooking besides the rice!

Ingredients

  • 1 lb of tuna
  • 3 tbsp of vegenaise (or good quality mayo)
  • 2 tbsp of sriracha (start with 1 if you are sensitive to spices)
  • 2 tbsp of soy sauce
  • 1 tbsp of sesame oil
  • salt and pepper
  • 2 cups of cooked sushi rice
  • 1 cup of cauliflower rice
  • 1 cup of edamame
  • 1 avocado, cut into small cubes
  • Optional: cut radishes, shredded lettuce or any kind of greens
  • Finishing touches: nori sheets, sesame seeds

Directions

Combine the tuna, vegenaise, sriracha, sesame oil and soy sauce in a food processor and pulse 8 to 10 times. Open see if it is combined and there are no big pieces of tuna left. If not just pulse a couple more times, don't over do it, you might ruin the tuna. Taste and adapt seasoning to your liking. I added some salt and pepper and  "Truff" hot truffle cause ( I know it may sound weird but it was divine).

Arrange all the ingredients in a bowl and sprinkle some cut nori sheets and sesame seeds. You may wan to drizzle a bit more soy sauce and sesame oil.
