Spinach and Ricotta Triangles

These are perfect for my boys' school lunch or week-end brunch! In fact when I prepare them I make sure to bake extras and freeze them so I can use them f3or both occasions!
Preheat the oven at 350F
Mix the ricotta cheese, drained spinach, eggs, salt and pepper.
Lay a phyllo sheet on a work surface then place a spoonful of the spinach and cheese mixture on it and fold into a triangle. Continue with the remaining ingredients.
Put the triangle in a baking dish and brush with olive oil and sprinkle with some malden salt.
Bake for 20 minutes.
