Spring salad with fennel and sugar snap peas

Serves 5-6

As soon as spring starts I get really excited about all the fresh and young raw veggies that will turn into salads... Here is the first one of the season!


  • 1 lettuce, washed
  • 5-6 radishes, thinly sliced ( I used a mandolin)
  • 1 fennel head, thinly sliced
  • 2 cups of sugar snap peas
  • 1 shallot, minced
  • 1 cup of chopped herbs, such as flat parsley and mint
  • Vinaigrette : 2 tbsp of dijon mustard, 2 tbsp of red wine vinegar, 1/4 cup of olive oil


Combine all the ingredients together for the salad in a large bowl.

Combine all the ingredients for the dressing together and mix until combined. Drizzle all over the salad and add some salt and pepper!
