Makes 1 bread

This has taken quite a few tries to achieve ut I think ( and according to my daughter) that I nailed it!


  • 2 cups of flour
  • 1 tsp of baking soda
  • 1/4 tsp of salt
  • 1/2 tsp of cinnamon
  • 1/2 cup of oil (I used avocado but coconut or olive would work as well)
  • 3/4 cups of sugar
  • 1 egg, room temperature
  • 1 tbsp of vanilla extract
  • 2 tbsp of buttermilk (or combine milk and greek yogurt)
  • 3 bananas
  • 1/2 cup of walnuts plus 1/4 to sprinkle on top


Preheat the oven at 325F and grease a bread baking pan.

Combine the flour, salt, cinnamon and baking soda in a large bowl and eave on the side.

In another bowl mix together the egg, sugar, vanilla extract  and oil and add into the dry ingredients as well as the buttermilk. It will be lumpy and thick but that is okay and be sure to not over mix it.

Mash the bananas and toss in with the batter and the nuts as well. Transfer to the baking pan and sprinkle the rest of the walnuts and bake for 50-55 minutes or until a toothpick comes out clean. Leave to cool for 10-15 minutes and remove from the pan and enjoy.
