Summer 5 minutes melon gazpacho

This is the kind of summer dinner that I love... Fruits are so sweet and flavorful during summer that you can hardly go wrong with gazpachos! Serve it with a nice summer salad, or some capers, prosciutto, crostinis and all the fun possible toppings so you can enjoy a glass of rosé and make dinner in 5 minutes!
Peel, remove the seeds and chop the melon and cucumber.
You can gill the peppers for a couple of minutes if you like a smoky flavor (if not just forget about this step. Removed the seeds and stem.
Place everything in a food processor and blend until super smooth. Taste and adapt seasoning.
Place in the fridge until ready to eat. This tastes the best when chilled. If it separated just give it a quick stir before serving.
I like hoping some small cubes of melon, peppers and cucumbers to sprinkle on top. I also add either feta crumbs or goat cheese. My kids love this with toasted pitta bread and prosciutto... This is like summer in a bowl and makes everyone happy!!
