With corn still in season right now, this taste absolutely amazing! I think I could even try with frozen corn and I can't fin fresh corn anymore. I will give it try and report back!


  • 4 large cron cobs, corn removed
  • 1-2 yellow tomato
  • 1 yellow bell pepper
  • 1 cup of cucumber, peeled and diced
  • 1 shallot
  • 2 tsp of apple cider vinegar
  • 3-4 cups of veggie stock
  • 2 tbsp of olive oil
  • Salt and pepper to taste
  • Toppings: corn, cucumber, cherry tomatoes, croutons, crab, pepitas, goat cheese,.....


Place all the ingredients in the blender (working in batches if necessary) and pulse until smooth. This can be done ahead of time and stored in the fridge ( it taste good hot as well if you don't like cold soups).

Add some yummy toppings to make a more sustainable meal.
