Summer greek salad with grilled salmon

I brought this version with the watermelon back from Greece. Since I have been craving salon fro a whole I thought I would try to combine both and it turned quite quite tasty! Watermelon and salmon go really well together...


  • 1 bag of arugula
  • 2 large pieces of salmon ( I had 1 lb total)
  • 1/3 cup of feta, crumbled
  • 2 persian cucumbers
  • 2 cups of watermelon, cubed
  • 1 large heirloom tomato
  • Dry spices for the salmon : 1 tsp of dried oregano, 1 tsp of each salt and pepper, 1/2 tsp of garlic powder, 2-3 pinch of chili powder
  • Dressing : 1 tsp of dried oregano, 1 small garlic clove, 2 tsp of reed one vinegar, 1/4 cup of olive oil, 1 tsp of maple syrup, salt and pepper
  • 2-3 tsp of avocado oil


Combine the spices for the salmon and sprinkle on top evenly. Heat up a large pan with 2-3 tbsp of avocado oil and cook the salmon on medium for 3-4 minutes on each sides. Don't move it around so it can create a nice golden brown crust. I like my salmon medium rare, if you don't, just give it another minute or two. Transfer to a plate, cover and leave to rest for a few minutes.

Meanwhile arrange the arugula on a large platter. Cut the tomato, the green onion and the cucumbers. Arrange on top along with the watermelon and the feta.

Whisk together the dressing ingredients and drizzle on the salad. Arrange the salmon into pieces on top, and enjoy!
