Summer Soup: Chilled Pea & Mint

Another easy soup with a luxurious flair to it, this is a perfect light meal for the summertime. If you're hosting an end of summer or labor day dinner, this is a great soup to serve as an appetizer.
Sauté the onion with a tablespoon of olive oil for 5 minutes.
Take out the onion, and put into a blender with the rest of the ingredients.
Let the soup chill in the fridge for 2-3 hours.
Garnish with mint leaves, peas, and feta cheese (optional)
