Summer squash gratin

This is perfect for meatless Monday, as a side to any protein or even with some kind of grains.

Ingredients

  • 2 zucchini
  • 2 yellow squash
  • 1 purple onion
  • 1 small can of diced tomatoes
  • 2 cups of feta cheese
  • Fresh herbs : rosemary and thyme

Directions

Slice the zucchini, squash and onion.

In a dutch oven, spread half of the diced tomatoes and arrange the veggies in a spiral all over. Add the rest of the tomatoes on top, some salt and pepper and the fresh herbs. Cover with foil and bake for 25-30 min until veggies are tender.

Add the feta and broil for 3-5 minutes until cheese is golden brown and bubbly!
