This kind of deconstructed chicken dinner is super delicious and easy to prepare. It is a different way to just leave everything separated on the platter so everyone can help themselves to what they feel like... My view is that when you mix this and have the perfect bite, it is an explosion of flavors... So I go for a bit of everything! Who would have thought that something so simple could be this flavorful!

Ingredients

  • 1 rotisserie chicken (or home cooked)
  • 2 medium heirloom tomatoes, cut into segments
  • 2-3 cups of watermelon cubes
  • 1 shallot, thinly sliced
  • 1/2 cup of toasted walnuts
  • 2-3 cups of chopped lettuce
  • 1 watermelon radish, thinly sliced (or a couple of regular radishes)
  • 1 bunch of fresh mint and fresh thyme
  • Vinaigrette: 1 lemon, 2 tbsp of champagne vinaigrette, 1 garlic, 1/4 cup of olive oil, salt and pepper

Directions

If your chicken is cold, reheat it at 250F, covered with foil for 15-20 minutes (add 1 cup chicken stock, this will avoid the chicken to dry out). Once done, carve it to your liking.

Get all the vinaigrette ingredients in a blender and pulse until combined.

Plate all the components of this dish on a large serving platter, drizzle the vinaigrette and sprinkle the fresh herbs as well. Like I said this can be eaten separately or mixed together, both are super yummy!
