Summery greek inspired salad

This is a delicious salad that would be the perfect addition to chicken or beef kebabs, or with some pitta bread and hummus or even simply on its own.
Wash and chop the lettuce. Wash and cut the tomatoes and the cucumbers.
Cut the pitta bread in small pieces and toss with 1 tbsp of olive oil, some salt and pepper and bake at 425F for 5-8 minutes until golden brown and crispy.
Thinly slice the shallot. Arrange it all in salad bowl.
For the vinaigrette mix all the ingredients in a small jar with a lid and shake until emulsified. Drizzle on the salad, taste and adapt seasoning.
