I am a huge fan of overnight oats and puddings... So easy since you prepare everything the night before, super delicious and then you can add all kind of yummy toppings!!!

Ingredients

  • 1 mango (ripe but not too soft)
  • 1 cup of yogurt ( I used coconut)
  • 2 tbsp of basil seeds (or chia seeds)
  • 2-3 tbsp of nut milk
  • 1 tsp of vanilla extract
  • 1/4 tsp cinnamon
  • Toppings: fresh fruits, granola, coconut flakes,...

Directions

Blend together the mango and yogurt until smooth. Mix with the basil seeds until they are evenly dispersed. Add the nut milk if too thick (keep in mind that the seeds will make the consistency thicker. I added 3 tbsp of milk).

Mix in the cinnamon and vanilla, and place in the fridge overnight. If you're in a rush, you can do this in 20-30 minutes.

Before serving add some fresh fruits, granola and/or coconut flakes and enjoy!
