I love an easy roasted chicken for Sunday dinner. My kids always ask for homemade fries and applesauce (very Belgian dish). Since I need to have my greens and veggies I always add a fresh salad to the mix.. This was totally approved by everyone so I though I would share it with you.

Ingredients

  • 2 heads of little gems
  • 1/2 cup of cherry tomatoes (sun dried work when not in season)
  • 2-3 radishes, thinly sliced
  • 1/3 cup of walnuts
  • 3 dates, pitted and chopped
  • 1/3 cup of fresh herbs, chopped (I used parsley, mint and basil, but chives and tarragon would be great as well)
  • Lemon vinaigrette: 1 lemon, 1 tsp of dijon mustard, 1/4 cup of olive oil, 1 tbsp of maple syrup, salt and pepper

Directions

Wash the little gems' heads and simply separate the leaves and place into a bowl. Add the tomatoes (I did not even chopped mines) and the walnuts.

Toss in the sliced radishes alongside with the dates.

Make the dressing by zesting and juicing the lemon and whisk it with the mustard, maple syrup and olive oil. Add some salt and pepper to taste.

Drizzle on the salad ( keep the extra in a jar in the fridge for a couple of days) add some salt and pepper, the fresh herbs and toss.
