I had a bunch of apples that I needed to use the other day so I thought I would come up with an easy way to use them....This crips was super easy since I used granola as my crunchy part. It took me a couple of minutes to get it in the oven and done... We had it for dessert with ice cream and I had some leftover for breakfast with greek yogurt...So yummy!

Ingredients

  • 8 apples ( I used a mix)
  • 2 tsp of cinnamon
  • 1 orange
  • 1 tbsp of cornstarch
  • 1/2 cup of coconut sugar ( or maple syrup)
  • 2 cups of granola
  • 1/4 cup of coconut oil, melted
  • Toppings: greek yogurt, ice cream, whipped cream,...

Directions

Preheat the oven at 375F. Peel and roughly cut the apples. Zest and juice the orange and toss with the apples, 1 tsp of cinnamon, the sugar and the cornstarch.

Transfer to a baking dish. Mix the granola with the coconut oil and the remaining tsp of cinnamon. Sprinkle on top of the apples and bake for 45-50 minutes. You want the fruits to be soft but not mushy...

You could do this with peaches when in seasons, you could add berries here as well or pears.

Serve warm with a scoop of vanilla ice cream so it melts on top.... So delicious!
