Super easy summer corn salad with grilled chicken

I am finally back in my kitchen and started cooking again! Here is an easy 15 minutes summer chicken dinner. It was so good, the kids devoured everything!

Generously season the chicken with salt and pepper on each side. Heat up a pan, drizzle 2 tsp of avocado oil and cook the chicken for 3 minutes before flipping it on the other side. Cook for an additional 4-5 minutes, until the chicken is cooked through (165F internal temp). The key is not to move the chicken around so it creates a nice golden crispy layer! Once it is cooked, leave it to rest on a plate covered for 10 minutes.
Meanwhile, grill the corn (I do it directly on the gas stove) but feel free to do it in a pan or on the grill. Cut it off the cob. Cut the cucumber, tomatoes and avocado in small cubes. Slice the green onion
On a serving plate, arrange the corn, cucumber, tomato, avocado and the green onion. In a small bowl combine 2 tbsp of olive oil, zest and juice from the lime, as well as some salt and pepper. Whisk it and pour it on top of the corn salad.
Slice the chicken and arrange on top of corn. Add the fresh herb and a last drizzle of olive oil! This would be delicious with grilled salmon ( same seasoning) or even shrimps!
