Last night I had lots of leftover roasted veggies ad was craving something super comforting and warm.... So I thought why not make an easy curry, it is so easy when you have curry paste at disposal, it literal takes. minutes to assemble. And if you don't have lefter veggies use frozen ones.... I kept it vegetarian, but rotisserie chicken would be a nice addition here. Chickpeas work great if you want more proteins...


  • 1/2 can of coconut milk
  • 2 tbsp of curry paste (I used green curry but any works, some might be more spicy than others so start with 1 tsp and taste before add more)
  • 2 cups of leftover roasted veggies (or frozen thawed)
  • 1 pack of miracle noodles (or any glass noodles you like)
  • 1 lime
  • 1/3 cup of fresh cilantro
  • Salt and peper to taste


Empty half of the can and the curry paste in a medium pot and stir until combined. Add some salt and pepper, your veggies and the noodles. Heat it up just for a few minutes.

Serve in 2 bowls, squeeze the lime and add some chopped cilantro, maybe a bit more salt and pepper and some sriracha if you need an extra kick. I added some salmon burgers as well and it was perfection. Som tofu, edamame, chicken or chickpea would all work nicely here as well.
