For those who know me, you know how much I love soups... Well this one is I think part of my top 5. It is thicks comforting and has a creaminess to it because of the added white beans....

Ingredients

  • 1 onion
  • 2 celery stalks
  • 2 large broccoli heads
  • 2-3 cups of spinach
  • 2 parsnips ( optional but it really adds a nice favor to it)
  • 1 can of white beans
  • 4-5 cups of stock
  • 2-3 tbsp of olive oil
  • Salt and pepper to taste

Directions

Peel and chop the onion as well as the celery. Sauté for a few minutes in a medium pot with the olive oil.

Wash, peel and roughly cut the parsnips, clean up the spinach and broccoli that you can break into florets.

Once the onion-celery is starting to get fragrant, add in the parsnips and broccoli, I usually season a bit at this stage, like 1 tsp of each salt and pepper. Stir for 2-3 minutes to build up the flavor before adding the stock ( you can use veggie or chicken stock, up to you). Bring to a boil and then simmer for 10-12 minutes. When the veggies are getting tender, add in the drained beans and spinach. Cook for 2 more minutes before blending it together.

Taste and adapt seasoning if necessary.

Serve this with some pepitas, or crouton or crunchy baguette....
