Sweet potato apple soup

The mix of sweet potatoes and apples makes this soup super nice and comforting! This could make a really easy appetizer in mini glasses when you have guests over or just dinner on its own when you need an easy night!


  • 2 large sweet potatoes
  • 2 apples
  • 1 shallot, minced
  • 1 small piece of ginger (1 inch, peeled)
  • 4-6 cups of stock
  • 2 tbsp of olive oil
  • Salt and pepper


In a dutch oven, sauté the shallot with the olive oil for a couple of minutes, add the sweet potatoes, some salt and pepper and coat it all together. Add the apples, the ginger and 4 cups of stock. Bring to a boil and lower to simmer for 15-20 minutes until potatoes and soft and cooker.

Using an immersion blender purée the veggies until smooth ( or transfer to a blender and do the same).

I like when my soup is thick, it makes it more satisfying, especially with the sweet potatoes. If you don't, feel free to add more stock and now is a good time to adjust seasoning as well.

Spoon some greek yogurt to make it creamy and sprinkle some pumpkin seeds to make it look pretty and add some texture!
