Sweet potato gnocchi lasagna

This is a super easy 1 dish vegetarian dinner! You can add as many veggies as you want and even change the gnocchis for variety. You can also add sausages or ground meat from more animal protein based meal.


  • 1 bag of sweet potato frozen gnocchis
  • 4 garlic cloves
  • 1 can of white beans
  • 1 jar of tomato sauce (or diced tomato work as well)
  • 2 cups of grated mozzarella ( you can use almond based cheese from TJ)
  • 1/4 cup of parmesan cheese, grated
  • 4-5 cups of mixed kale and spinach (or other greens)
  • 2-3 tbsp of olive oil
  • 1 pinch of chili flakes


Preheat the oven at 400F.

In an oven safe pan, heat the olive oil and sauté the garlic and the chili flakes for a couple of minutes. Add the gnocchis and greens and toss until greens are wilted. Add in the beans and tomato sauce and stir until combined. Sprinkle 1/2 tsp of slat and 1/2 tsp of pepper.

Sprinkle the parmesan and mozzarella on top and cook int he oven fro 25 minutes until cheese is bubbly and golden brown.
