Sweet Potatoes Hash brown with Sausages and Spinach

Sunday brunch is one of my favorite meal to prepare. I have time to do cook, there is no rush!! I love eggs, I love sweet potatoes so putting them together is a win-win for me!!!


  • 1 large sweet potato, cut into small cubes
  • 2 tbsp of olive oil
  • 1/2 lb of sausage meat ( I used turkey sausages here)
  • 1/2 bag of frozen spinach
  • 6 eggs
  • Salt and peper


Preheat the oven at 400F.

Place the sweet potatoes in a large skillet with the olive oil and sauté for 5-8 minutes. Add the meat and spinach and put in the oven for 15-20 minutes. Remove from the oven, make little nests here and there and crack the eggs gently ( so they do not break) and return to the oven for 8-10 minutes ( depending on how you like your eggs) Add some salt and pepper and enjoy!
