These are so tasty! They make a great side dish or you can make them for breakfast and put an egg on top, or indulge in a festive mode with caviar on top!!!

Peel and grate the sweet potatoes and transfer them to a bowl. Finely chop the green onions. Combine it all together (except for the oil).
Heat up the avocado oil. Using two spoons make the latkes and cooke them on each side for 3 minutes on medium. Do not move them or flip them too fast otherwise they'll break (if they do it means they are not cooked enough).
You can make them ahead of time and reheat them in your toaster oven just before serving.
