Sweet Potato- pumpkin shepherd pie

Shepherd Pie is one of my to go dish. It has plenty of veggies and meat. I can mix it up so many different ways by using different meats or veggies, plus my kids love it. This time I used sweet potatoes and pumpkin combined and it turned out delicious!

Ingredients

  • 1 lb of chicken sausage meat
  • 1 large sweet potato
  • 1 cup of pumpkin puree ( NOT pie filling)
  • 2 cups of peas ( frozen, thawed)
  • 2 tbsp of butter
  • Salt and pepper

Directions

Cook the meat in a pan until brown, add some salt and pepper to taste.
Boil the potato until soft. Transfer to a food processor, add the pumpkin puree, butter, 1/2 tsp of salt and 1/2 tsp of pepper, and process until smooth.
Divide the meat into small ramekins, add the peas and puree on top.
I used small ramekins this time, but you can put it in a large baking dish.
Serve immediately or reheat in the oven for 20 minutes at 350F.
