Sweetened Sweet Potato Omelet

This is not quite as fluffy as a pancake, but it is smooth, sweet, super delicious and healthy! I was experimenting in the kitchen the other day when I tried this one and did not expect it to be so good. I think it might become one of my fave!! This would be good as well using pumpkin purée.
Preheat the oven at 400F.
Beat the eggs in a large bowl and add the cooked sweet potato (not the skin, just the inside) and the vanilla. Mix until smooth and transfer to a hot pan (greased with coconut oil), when the edges are set, finish in the oven for 5-10 minutes until cooked through.
Transfer to a plate and cut into 2-4 portions
Add a dollop of yogurt, maple syrup and enjoy this deliciousness.
The good thing with this dish is that if you do not have time it can be made a day ahead and reheated for a quick breakfast on a school day.
