Swordfish with mint sauce and corn salsa

This is a great summer dish, when fresh corn tastes amazing and it is still grilling season. I know that swordfish can easily get dry, hence the mint sauce!! It brings amazing flavor to this dish and pairs really nicely with all the different flavor here!

Ingredients

  • 1 lb of swordfish, cut into cubes
  • 1 tsp of oregano
  • Salt and pepper
  • Olive oil
  • 3 cups corn
  • 1 shallot, minced
  • 1 lemon, juiced and zested
  • 2 tbsp of fresh mint
  • Mint sauce: 2 cups of fresh mint, 1 tbsp of maple syrup, 4 tbsp of boiling water, 4 tbsp of white wine vinegar, 1/2 tsp of salt

Directions

Combine the swordfish with some olive oil, salt, pepper and the oregano and marinade it for a couple of minutes.

Meanwhile combine all the ingredient for the mint sauce and leave it to rest while you prepare the rest.

Toss together the corn, the lemon juice and zest, the shallot and the fresh chopped mint. Taste and adjust seasoning.

Put the swordfish cubes onto the skewers and grill for 2-3 minutes on each side. While the fish is cooking blend the sauce so it has a smooth consistency.

When the fish is ready, plate it all together and enjoy.
