Makes 10-12 meatballs

I feel like my kids will always eat meatballs no matter how I make them... Since they also love asian flavors, I combined both of them here. It takes less than 20 minutes to make and is super delicious. I make my own teriyaki sauce so I can control better what's in it but I feel like you can find good quality ones in grocery store in case you don't want to make it. Although I promise you that this is an easy one, as always with me.

Ingredients

  • 1 lb of ground turkey (chicken or beef works great as well)
  • 2 garlic cloves, grated
  • 1 tbsp of fresh grated ginger
  • 2 tbsp of soy sauce
  • 2 tbsp of breadcrumbs
  • 1 tbsp of maple syrup
  • 2 tbsp of avocado oil
  • Sauce: 1/4 cup of soy sauce, 3 tbsp of maple syrup, 3 tbsp of rice vinegar, 2 tbsp of mirin, 1 tsp of sesame oil, 2 garlic
  • Toppings: sesame seeds, cilantro, chopped peanuts or cashews

Directions

Combine all the ingredients for the meatballs ( except for the avocado oil) and mix until combined. Using an ice cream scooper form the meatballs. Depending on the size you might have between 10-12 of them.

Heat up the avocado oil and cook the meatballs for 2-3 minutes on each side so they have a nice golden brown color all over.

Mix the ingredients for the sauce and add them to the meatballs. Cover and simmer for 3-5 minutes until it reduces a bit and the meatballs are cooked through.

Sprinkle with sesame seeds, cilantro and chopped peanuts.

Serve with brown rice and steamed broccoli.
