Thai peanut chicken

This dinner takes less than 5 minutes to assemble and then the slow cooker does the work and create all the delicious flavors!! I served this with asian slaw, jasmine rice and cauliflower rice as well.

Ingredients

  • 1lb of chicken thighs, boneless and skinless (chicken breast works great as well)
  • 1 medium red bell pepper
  • 1 medium zucchini
  • 2 garlic cloves, minced
  • 1 tbsp of grated fresh ginger
  • 1/3 cup of soy sauce
  • 1/2 cup of peanut butter
  • 1 cup of chicken stock
  • Finishing touches: Lime, cilantro, fresh basil, chopped peanuts

Directions

Cut the chicken in smallish size and season with salt and pepper. Slice the pepper and the zucchini. Assemble all the ingredients in your slow cooker and make sure that your stir it all with a wooden spoon so it is nicely combined and coated.

Cook on low for 4 hours.

When ready to serve, squeeze the lime juice and add some fresh Thai basil, cilantro and some chopped peanuts.

I had mine with caulirice and it was amazing, my kids did a mix of jasmine rice and caulirice and also loved it. There was not a crumb left when dinner was over, everyone went for seconds, so I'd say it was a successful meal.
