I just made tons of turkey stock and still have quite a bit of leftover turkey meat as well. What do with it? A super easy and clean turkey soup. The beauty here is that you can keep it plain or add pasta, leftover veggies, I even add some cranberry sauce ( trust me, it works!) This could be done for an easy chicken soup as well, using rotisserie chicken.

Ingredients

  • 2 cups of cooked turkey meat, chopped in small cubes
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 medium onion, chopped
  • 2 cups of cooked pasta
  • 1-2 cups of leftover roasted veggies or frozen ones work really great as well
  • 4-6 cups of turkey stock
  • 1/2 cup of leftover cranberry sauce
  • 2-3 tbsp of olive oil
  • Salt and pepper to taste

Directions

In a medium pot, heat up the olive oil and cook the carrots, celery and onion for 5-10 infuse on medium until translucent and fragrant.

Add the stock, cooked meat and bring to a simmer. Taste and adapt seasoning. You can add the leftover (or frozen veggies at this point) and also the pasta (if you are suing them). I serve the bowls then add some cranberry sauce for whoever ants some, I personally love it!!

This is the easiest dinner since I am using cooked food (and /or frozen) so it is only about assembling and reheating! Exactly what I need after the cooking frenzy of Thanksgiving week!
