The most delicious and moist yogurt cake

I was talking to a friend the other day who told me that yogurt cake was her favorite dessert an dit remained her so much of her childhood. Sine I had never made one before I did some research and could not help myself and made one for her. It is so easy to make and really delicious! I highly recommend it with berries and whipped cream and even maybe for breakfast! The recipe i got inspired from by "thekitchn" calls for nutmeg which I replaced with cinnamon and I also lowered the amount of sugar since I don't like when it is too sweet.

Preheat the oven to 350°F. Grease a 9-inch springform pan and line the bottom with parchment paper.
Combine together the yogurt, olive oil, sugar, eggs, and vanilla in a large bowl and whisk until smooth.
Swift all the dry ingredients into the liquids and stir just until no lumps remain.
Pour the batter into the cake pan and bake for 45 minutes, covering with foil at the end so the top does not get too brown and burn.
I like to check 5-10 minutes before my timer goes off just to be safe. I always say that it is easier to bake for but once it is overdone it is dry and there is nothing you can do about it....
Once a toothpick or a knife comes out clean, transfer the cake to a cooling rack and let it cool for 10 minutes before removing it from the pan.
Serve the cake warm or at room temperature. Enjoy with loads of berries and whipped cream or even more yogurt for breakfast....
