This is so full of nutrients, super satisfying, clean and absolutely delicious.


  • 1 small romaine lettuce, washed and chopped
  • 1/2 cup of red cabbage, shredded
  • 1 small Persian cucumber, washed and cubed
  • 1 small carrot, washed and chopped
  • 1/4 of avocado
  • 1 pouch of tuna (8oZ)
  • Sauce for tuna: 1 green onion 1 celery stalk, 1/2 tsp of mayo, 1/2 tsp of mustard, 1/2 lemon
  • Vinaigrette for salad: 1 tsp of dijon, 2 tsp of red wine vinegar, 1/4 cup of olive oil, salt and pepper
  • Options: jalapeño, crackers


Assemble the salad components in a bowl. Toss the tuna with the sauce ingredients in another bowl and spoon on the salad.

Combine the vinaigrette ingredients and whisk until emulsified. Drizzle on the salad, sprinkle some salt and pepper (some thinly sliced jalapeño if you want a little kick) and addd some crackers for a nice crunch.
