This is the vegetarian version of chicken satay, I prepare the tofu and then serve it on rice, with veggies I have in the fridge, such as red cabbage, cucumbers, cherry tomatoes,... Or even sometimes with leftover veggie.. It really goes well with a lot of things!

Ingredients

  • 3 slices of firm tofu
  • 2 tbsp of peanut butter
  • 1 tsp of soy sauce
  • 1 tsp of sesame oil
  • 1 tsp of rice vinegar
  • 1/2 tsp of turmeric
  • 1/4 tsp of cayenne pepper
  • Serve it with : rice, cabbage, cucumber slices, seaweed, grated carrots, edamame,...

Directions

Combine in a bowl everything except the tofu and mix until smooth. Marinated to the tofu in the sauce for 20-25 minutes (the longer the better, so even overnight would be great).

Heat up the grill and cook the tofu for 2-3 minutes on each side. Keep the sauce as you will want to spoon in over the rice ad veggies!

Make your bowl with some rice, red cabbage, cucumber and edamame and drizzle the rest of the sauce on top. Add tome sesame seeds and fresh cilantro and enjoy!!!
