Whenever you find yourself in a bind and have no time to go grocery shopping, this pantry meal tomato soup will save you. It sure has saved me many times. I serve it with grilled cheese, or crispy quinoa, or even mini meatballs, I usually figure it out according to what I have at hand.


  • 1 large can of tomatoes
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • A bunch of basil
  • 2-3 cups of veggie stock
  • Salt and pepper
  • Olive oil


In a large pot, sauté the onion and garlic with 2 tbsp of olive oil for a few minutes.
Once fragrant, add the tomatoes, chicken stock, basil, salt and pepper and bring to boil.
Let it simmer for 10-15 minutes.
Put it in blender et voila!
Serve it with grilled cheese or croutons or fried quinoa... or just a piece of toast.
