Tomato summer squash galette with fresh basil and feta

This is the kind of dish I love making during the summer. It is perfect for brunch or lunch. Since I am using store bought dough, it is super easy to make and it is absolutely delicious. If you have guests over make two of them with a large green summer salad and done!

Ingredients

  • 1 sheet of pie dough (store bought)
  • 2 medium heirloom tomatoes
  • 2 small summer squash
  • 1/3 cup of feta (crumbled) (or goat cheese)
  • 1 bunch of basil leaves
  • Olive oil
  • Salt and pepper

Directions

Preheat the oven at 425F and line up a baking sheet with baking paper and top with the pie dough.

Slices the tomatoes and try to remove excess moisture with paper towels. Thinly slice the squash, toss with kosher salt, leave for 5-10 minutes and remove the excess moisture as well.

Line the squash slices on the dough leave 1/2 inch border all around. Top with the tomatoes. Gently fold the borders of the dough towards the centre. Drizzle some olive oil, add the feta and sprinkle some salt and pepper ( go easy on the salt because feta is already salty and the veggies have been slated as well).

Bake for 50-55 min until the crust is golden brown. When the galette is cooked add the fresh basil, cut and enjoy!
