Tortellini pesto minestrone soup

This is great way to get dinner ready in less than 20 minutes. It is also a great way to get a lot of veggies together in one dish.... The fact that I add tortellini to it makes it super easy to get my kids to eat it...
Sauté the carrots, shallot and celery for 5 minutes on medium high, stirring once in a while. Add the zucchini and butternut squash and keep on cooking for another 3-4 minutes. This process with the veggies is gonna give it all its flavor so don't shortcut it.
Add the stock, pesto, broccoli, bring to a boil, and simmer for 5 more minutes. Add the kale and tortellini and cook for 3 additional minutes.
Serve and sprinkle some parmesan or extra pesto on top and enjoy.
