Pokes are very popular at my house. I think if you ask my kids what they want for dinner it usually is poke bowls! I use sushi rice for them (my rice cooker makes it super easy) and caulirice for me. When after school gets crazy busy for me, this is a life savor!!!!

Ingredients

  • 2 cups or sushi rice, cooked
  • 2 cups of raw tuna fish (sashimi grade), cut into small cubes
  • 1 avocado, cut into small cubes
  • 1 cup of edamame
  • 2 sheet of seaweed cut into small pieces
  • 2-3 tbsp of say sauce
  • 1 tbsp of sesame oil
  • 1 tbsp of sesame seeds

Directions

Put the tuna and avocado in a bowl, add the soy sauce sesame oil and gently toss together. Sprinkle the seeds on top.

To assemble the bowls start by spooning the rice (still warm, it makes the dish even better), add the edamame,  the tune-avocado mix and sprinkle more seeds and seaweed on top. You may need to add a bit more of soy sauce depending on your taste.
