Makes 15-18 small meatballs

This is a good way to give extra veggies to the kids!! They will not taste it and get all the benefits without the fight!

  • 1 lb of ground turkey
  • 1 small zucchini, grated
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 1 egg
  • 4 tbsp of chopped fresh herbs (parsley, cilantro, basil mint,...)
  • Salt and pepper to taste
  • 2-3 tbs pof olive oil

Comine all the ingredients but the olive oil in a large bowl and mix with a fork until everything is nicely combined. Don't press too hard so the meatballs will stay tender.

With an ice cream scooper form the meatballs and rolls them in your hands so they have a nice shape.

Heat up the olive oil and cook the meatballs on each side until nice and brown all around and cooked through.

Serve home right away or keep them on the fridge for a few days or in freezer for a few weeks.
