One of my very good girlfriend gave me this recipe a few years ago and it became a statement in my house... especially on colder days and busy days! I put everything the slow cooker and done! It can also be done on the stove if you are in a hurry and haven't prepped anything in advance! The original recipe called for peppers, but I am not a fan of peppers so I omit them here....

Ingredients

  • 1 lb of ground turkey ( I use a mix of white and dark meat)
  • 1 onion, minced
  • 1 carrot, chopped
  • 2 celery stalks, chopped
  • 1 (26 oz) can of crushed tomatoes
  • 1 (15 oz) can of navy beans
  • 1 (15 oz) can of pinto beans
  • 1 tsp of ground cumin
  • 1/2 tsp of ground coriander
  • 1/4 tsp of paprika
  • 1 pinch a chili flakes ( or more if you like spicy)
  • Salt and pepper to taste.

Directions

Sauté the meat with 1 tbsp of olive oil and the onion for a couple of minutes until cooked through. Put everything in the slow cooker on low for 4 to 6 hours and come home to a delicious dinner!!!!
