Turkey eggplant lettuce cups

This is a really easy stir fry to put together and eating it in lettuces cups makes it fun. Adding veggies to it making it a 1 pot meal, so I am all for it. It is also delicious on top of rice, cauliflower rice or noodles or even quinoa....
Heat up the avocado oil with the shallot, garlic and ginger for a few minutes until fragrant. Add the turkey and cook for a few more minutes. Add the eggplant and combine with the soy sauce, vinegar and sesame oil, cover and simmer for 10-12 minutes. Transfer in a dish and sprinkle the cilantro, green onions and cashews on top. Spoon in a lettuce cups and enjoy!
