Turkey meatloaf

This is soooooo delicious! I use cranberry sauce instead of ketchup for the glaze and it works really nicely! I add some chopped veggies for extra flavor and sub the breadcrumbs for almond meal.

Ingredients

  • 2 lbs of ground turkey (mix of dark and white meat)
  • 1 carrot, chopped
  • 2 celery stalks, chopped
  • 1 small onion, chopped
  • 2 tbsp of olive oil
  • 1 egg
  • 1/3 cup of almond meal (or breadcrumbs)
  • 1/2 cup of cranberry sauce
  • Salt and pepper
  • 2 tbsp of olive oil
  • 1/3 cup of chopped parsley
  • 1/2 cube of veggie chicken stock

Directions

Preheat the oven at 350F.

Sauté the carrot, celery an onion with the olive oil for a couple of minutes. Add the 1/2 cube of stock and leave it to cool down on the side while you prep the rest.

Combine the turkey, egg, almond meal, 1 1/2 tsp of salt, 1 tsp of pepper, the chopped parsley and cooked veggies and mix until combined.

Line a bread pan with parchment paper and transfer the meat into it. Spoon the cranberry sauce on top and place in the oven for 45-50 minutes or until inside temp is 160F. Cover and leave it to rest for 10-12 minutes. You can always heat more cranberry sauce and add more when plated.
