I love these 1 pot meal, full of goodness and eggs for brunches on week-ends. They are super easy to assemble and have tons of greens and veggies! I could eat eggs everyday, any style! My family likes to mix it up so I constantly try many versions of this dish to keep it fun!


  • 6-8 eggs ( I like to have 2 so I make more)
  • 4 turkey sausages, cases removed
  • 5 cups of green leaves ( spinach, collard greens, kale,...)
  • 1 cups of frozen peas, thawed
  • 1 onion, chopped
  • 1 pinch of paprika
  • salt and pepper to taste
  • 2-3 tbsp of olive oil
  • 1 cups of small tomatoes cut into 4
  • 1 avocado chopped for garnish


Preheat the oven at 375F.

Sautée the onion with olive oil in a pan for 5-6 minutes. When onions are translucent, add the sausages some salt and pepper and cook for a little longer. Add the the greens and the tomatoes and gently cook for another couple of minutes.

Make little nests here and there and crack the eggs into the pan, without breaking the yolks. Put in the oven for 10-15 minutes until the whites are cooked through but the yolks are still runny! Serve with the avocados on top.
