Makes 4-6 quarts

I always make turkey stock the day after thanksgiving, it is sort of a tradition... It is so simple I should make it more often, I just don't always think about it....


  • 1 turkey carcass
  • 1 large onion, rouge chopped
  • 2 carrots, washed and chopped
  • 2 celery, chopped
  • 1 tbsp of apple cider vinegar
  • 4-6 quarts of cold water ( this depends on the size of you biggest pot)


Place it all in a large pot on the stove. Bring to a boil then simmer and cook partly covered fro 6-8 hours. I sometimes do it for 12 hours, I  find that longer cooking time really enhances the flavor.

Drain it and transfer to jars. It keeps ps in the fridge for a good week or so and in the freezer for a couple of weeks, even months.
