Turmeric cauliflower soup

This is a really clean flavorful and easy soup to make. If you use an instant pot, you can have this ready in 10 minutes!


  • 1 medium cauliflower head, cleaned and cut into florets
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 tsp of turmeric
  • 1 pinch of chili flakes
  • 1 tsp of grated ginger
  • 1 cup of coconut milk
  • 3-4 cup of stock
  • Salt and pepper
  • Optional: cilantro, toasted cashews, greek yogurt


In an instant pot (or in a large pot), sauté the onion, celery, carrots, garlic, ginger, turmeric and chili flakes for 2-3 minutes, until fragrant.

Add the cauliflower toss to coat for another minute or so. Add the stock and cook on pressure cooking for 3-5 minutes.

If you are cooking on the stove, bring to a boil then simmer for 15-20 minutes, until the cauliflower is really tender and you can easily pierce it with a fork.

Release the pressure, transfer to  blender, purée until smooth and add coconut milk. Taste and adjust seasoning. Serve with some cilantro and taste cashews!
