I know it sounds weird, but it is juts a fun way of getting my kids excited about dinner and it worked, it is like a poke without the fish but with tons of veggies.

Ingredients

  • 3 cups of brown rice, or caulirice
  • 1 cup of shaved carrots
  • 2 persian cucumber, cut into matchsticks
  • 2-3 cups shelled edamame
  • 1/4 of red cabbage, shredded
  • 4-5 sheets of seaweed roughly chopped
  • Carrot ginger dressing (see recipe attached)
  • Options: leftover cooked veggies, pickled veggies, tofu, actual fish or even shredded chicken

Directions

My family really likes when I do a buffet style kind of dinner so everyone makes their own bowl... This is exactly the case here, serve all the ingredients in cute little bowls and have them help themselves. Like I said you can easily add sashimis, shredded chicken, tofu,... Last time I even made mine meatballs for the boys since they need some kind of protein.

Drizzle my carrot ginger dressing and sprinkle some sesame seeds and you have dinner ready in no time... I always keep some frozen rice and cauliflower rice, so this took me less than 10 minutes last night!
