Veggie Curry Bowl

I usually go for salads when I have lunch on my own at home, it is easy to prepare and I can always whip up something good in a few minutes.
Today, I was craving something warm an comforting because I feel a little bit under the radar. I made this veggie curry bowl in less than 10 minutes. It was so delicious that I thought I would share the recipe!
Place the veggies in a small pot with 1 inch of water and bring to a boil, cover and let it steam for a few minutes.
Add all the spices, tomato paste and coconut milk, stir and cover for another 2-3 minutes.
Meanwhile cook the caulirice with some olive oil, the garlic and some salt and pepper for 2-3 minutes.
Transfer to a bowl and spoon the curry veggies on top and season according to taste. I like to add some sriracha to give it a nice kick!
This can easily be adapted to a family meal!
